Yum, Yum, Yum … I love french toast.  This one include berries, and is healthy for you … SCORE !! If you aren’t a blueberry fan, add strawberries, peaches, or any other fruit you love.  I’m telling you I’ve tried this with several different fruits … it’s just as delicious!

Recipe:

6 C Cubed, Whole Grain Bread
8 Egg Whites 

1 1/2 C Almond Milk
1/4 C Maple Syrup
1 tsp Vanilla Extract
2 tsp Ground Cinnamon 
2 tsp Nutmeg 
2 C Blueberries

Preheat the oven to 350 degrees.
Whisk together egg whites, almond milk, maple syrup, vanilla extract, nutmeg, and cinnamon. 
Put all the bread into a greased 9×13 rectangular baking dish.
Pour the egg mixture evenly over the bread.  Let sit for 30 minutes to make sure everything is soaked before cooking.
Mix in your fruit.
Bake for 45 minutes or until the egg mixture is completely cooked.
