As Morgie would say “YUMMALICIOUS!!”    Ok, ok, he really wouldn’t say much more than woof, and that’s IF you can get him to bark, lol.  Regardless, this is a fabulous alternative to mixing your tuna with mayonnaise.  Once mashed up, avocado can mimic the texture of mayo, without all the calories.  The fats you receive when eating avocados are healthy, wholesome nutrients your body actually needs. 

When you consider making nutritional changes in your lifestyle the one piece you should never compromise is your flavor!  There is no reason your dishes can’t be just as delicious, and maintain your healthier goals all at the same time.  This is one of many recipes that accomplishes this for you.

This is just one version of my avocado tuna salad.  I am including it on this blog, because it seems to be the most popular one I make.  With each of my tuna salad recipes, the only ingredient I have swapped out is the mayo.  I now use an avocado.  Being an avocado freak … I am loving the new recipes :O)
1 Avocado 

1 can Tuna, in spring water, drained

½ lemon, squeezed

1 tsp extra Virgin Olive Oil  

2 TBSP Chopped Parsley  

2 Green Onions, chopped  

1 Red Bell Pepper, chopped  
1 TBSP Relish

Pinch of Salt 
1 head Romain Lettuce

  1. Cut and scoop out avocado.  
  2. Add lemon juice, then olive oil and salt.  
  3. Mash the mixture, until it is smooth in texture.
  4. Mix in tuna, herbs and veggies.  
  5. Place scoop in 4 lettuce leaves, and enjoy as a lettuce wrap.  2 Wraps per serving.
