A fall vegan delicacy.  I originally found a similar recipe online, and have discovered how difficult it is to find some of the original ingredients.  I modified this to create an easier to find and prepare version.  The original was so healthy, and it sounded amazing.  However, the stress of trying to find some of the ingredients has led me to this alternative, which is amazing in it’s own right.  The greatest difference is i can just run down to the store and grab some stuff and toss it into the crock pot :O)  

A lazy cook’s dream = easy to find ingredients!

Recipe:

2 TBSP Extra Virgin Olive Oil  
1 Red Onion, chopped  
½ tsp Tomato Paste  
1 tsp Red Pepper Paste 

1 large can Pureed Pumpkin (this is easier for me to find)
½ C Green Lentils, washed and drained  
½ C Chickpeas
3 Garlic Cloves, minced
1 Green Pepper, chopped
1 Lemon, juiced
Salt and Pepper
2 C Water

 
Instructions 
Heat olive oil in a medium skillet and saute the onions.  Mix in the tomatoes and pepper paste.
Toss in green lentils and chickpeas, stir.  
Toss in chopped pepper and garlic cloves. Stir for 2 minutes.  
Put all ingredients into a crockpot, and cook for 4 hours on LOW or 6 on HIGH.
