Can you say:  Mushroom delight!  If you are a mushroom fan, this is one recipe that will have your mouth watering.  It’s simple, and easy to use.  If you don’t have a grill, or if it’s too chilly to grill, you can always use an indoor griddle to prepare these.  Some of my friends aren’t meat eaters, and I wish to respect their lifestyle choices when going into their homes.  This is one of the recipes I’ve brought with me & it’s always a huge hit!
6 Portabello Mushroom Caps
3 Peaches, cut in half
6 Burger Buns
4 TBSP Extra Virgin Olive Oil 
2 TBSP Rosemary
1 TBSP Thyme 
2 Garlic Cloves, minced
1/2 Lemon, juiced
Salt & Pepper
  1. Mix together EVOO, rosemary, thyme, garlic, lemon and brush over peaches and mushroom caps before grilling.  Sprinkle on salt and pepper to your taste liking.
  2. Grill each side of the caps and peaches for 3 to 4 mins.  Brush with marinade, as needed.
  3. Place one grilled mushroom cap and one grilled peach half onto each burger bun.
  4. Top with guacamole, sprouts, tomatoes, onions, or any other veggies/sauces of your choice.
