Anyone else hate waking up and actually making breakfast every morning? I really, and truly am NOT a morning person whatsoever! Simply put, the last thing I want to do is wake up and have to make something. Many of my early morning clients will tell you I show up with a shake and a cup of coffee … this is my typical breakfast. Except when it gets cold. That’s the point where I need a little bit more warmth ;o)
This is just one of many recipes for overnight oatmeal I’ve found out there. This one I’ve modified a bit to create a healthier version of it. Not to mention, I have issues with diary, so when I make this I use Almond Milk, not skim milk. You are always welcome to substitute the almond milk with skim milk for this recipe.
The scents that come from this recipe are absolutely wonderful to wake up to! It really will have you waking up feeling like you just transported to a farmhouse in the 1800’s with a wonderful Granny who’s made you a hearty breakfast to kick start your day.
Now, go toss those ingredients into your crock pot, plug it in and turn it to low, then go to bed ;o)
1 C Apples, chopped into bite size pieces
1 1/2 C Almond Milk
1 C Steel Cut Oats
2 TBSP Butter
1 TBSP Cinnamon
2 TBSP Organic Maple Syrup
1 tsp Vanilla Extract
Optional: Top with raisins, walnuts, or pecans
1. Mix together all ingredients in crockpot.
2. Cook on LOW for 7 hours.
