Another Maya fav, this time an easy way to enjoy lunch 🙂  Or perhaps a snack to munch on for a bit.  This one is very simple to prepare.  You will be quickly enjoying lunch within minutes!


4 C Cooked Chicken Breast, cubed
1 Fennel Bulb, chopped
1/4 C Roasted Pistachios, chopped
1/4 C Dried Cranberries
1 TBSP Roasted Pepitas
3 TBSP Coconut milk, canned and full fat
1 tsp Dried, Ground Sage
3 TBSP Fresh Parsley, minced
Dash of Salt & Pepper
Head of Romaine lettuce

  1. Mix all of the ingredients, except the lettuce, in a bowl. 
  2. Serve by spooning the chicken salad in large Romaine lettuce leaves.

Recipe is enough for 4-6 servings.  Each serving is 221 Calories.
