Have you seen the Pinterest post that shows strawberries placed into ice cube trays and filled with melted chocolate?  This is a bit of a twist on that.  Rather than chocolate I use yogurt.  It provides so many options with the fruit, and it’s a recipe that can be easily tossed into a ziplock bag and eaten on the run.  Delicious, healthy and easy to grab-and-go.  There goes one excuse ;o)


1-2 C Berries or other fruit, chopped into little pieces
1 Large container Low Fat Plain Greek Yogurt 
1 Ice Cube Tray

  1. Place fruit into each ice cube cup.
  2. Pour yogurt over each cup until they are filled to almost the top.  As you would for an ice cube.
  3. Freeze for at least 3 hours.
  4. Take out and store in the refrigerator or in the freezer in plastic wrap, until you are ready to eat them.
