I have looked for recipes for a while now that use sweet potatoes and are yummy at the same time.  Now truth be told, I wasn’t always a sweet potato fan.  During my weight loss journey, my taste buds really popped open and it turned out I liked all these foods, sweet potatoes being amongst them.  I can’t get enough of them now.  You have a few options with this one.  You can include the bacon bits, and chicken broth or leave out the bacon and go full on Vegan by using vegetable broth.

Recipe:

3 lbs Sweet Potatoes, peeled and cut into 1-inch pieces 
3/4 C Coconut or Almond Milk, heated 
2 Garlic Cloves, minced
1 Chicken Bouillon, mixed into milk
1/4 tsp Ground Nutmeg 
3/4 C Fully Cooked Smoked Bacon, cut into small pieces
Salt and black ground pepper to taste  
1/2 C Fresh Cilantro, chopped (optional)
  1. Place sweet potatoes in a large pot of cold, salted water.
  2. Boil until very tender, about 15 minutes.
  3. Drain and put into a bowl.
  4. Mash sweet potatoes with a potato ricer or masher.
  5. Stir in the coconut or almond milk until mixture is creamy. 
  6. Add the garlic, nutmeg, sauteed bacon, salt and pepper.
  7. Stir well and serve. 
  8. If you choose to use cilantro, stir in right before serving.
