This isn’t your traditional chicken stew recipe.  Feel free to use either turkey or lean ground beef in this recipe.  Either will create a delicious meal.  Easy to make and easy to enjoy with the family after a hard day.  Especially if there is a chill in the air or you feel like you are fighting a cold!  With all of the antioxidants in this recipe, it would be hard for those cooties to hang around to bug you after one bowl.

1 1/2 lb. butternut squash, peeled, seeded & chopped into bite size pieces
3 1/2 cups chicken broth
1 1/2 lb. boneless, skinless chicken breasts, chopped into bite size pieces
1 TBSP Extra Virgin Olive Oil
1 Medium Yellow Onion, finely chopped
1/2 tsp Kosher Salt
4 Garlic Cloves, minced
1 1/2 tsp Dried Oregano
1 can (14 oz) Diced Tomatoes
2/3 C Quinoa
3/4 C Pitted Kalamata Olives, sliced
Salt and Pepper to taste
1/4 C Parsley, chopped

  1. Break out that crock pot!  
  2. Place all ingredients, except chicken broth into a crock pot and mix together.
  3. Pour chicken broth over the mixture.
  4. Cook for 4-6 hours on low.
