This is a special treat for all those fans of egg salad who have felt like they have to nix their favorite sandwich in order to adopt a healthy lifestyle.  You should never get rid of a favorite.  If it is something you wish not to modify, enjoy it as a treat.  If it is a dish that you would prefer to enjoy more frequently, try some alternatives like this one.

The joys of avocados is that once mashed you can mimic a great variety of flavors.  This is a fabulous way of transforming your traditional egg salad sandwich is a healthier option.  Each serving will only be 1/8 of an avocado, which is half the recommended daily serving size of an avocado.  It’s healthy fats will be relished by your system.  So eat and enjoy every bit guilt-free!

Recipe:

4 Hard Boiled Eggs
1 Large Avocados, mashed
1 TBSP Dijon Mustard
Salt and Pepper to taste

Chop up the eggs, combine with the remainder of the ingredients.  Place on whole grain toast, rice cakes or whole grain crackers.  One suggestion is to make an Egg Salad Burrito by using a whole wheat tortilla.  Top with tomatoes, lettuce and any other toppings you like.
