After spotting this recipe in the Savory Spice Shop, I was determined to transform the recipe for one of my clients. She has serious dietary restrictions, white sugar and butter being two ingredients that have been eliminated from her diet. Karen’s original recipe is fabulous as is, this is merely an option for a healthier way of preparing this dish.
I added coconut flakes towards the end for a little added pep, feel free to include it or not. It doesn’t make or break this recipe, just adds a little extra flavor to it.
For those of you who aren’t able to catch this in the video, I replaced the white sugar and butter with local organic honey. This means in the end it should sit and settle a bit longer to create the juicy topping that you are going for. Otherwise, it’s delicious, and truly one of those meals you want to hide from yourself – you’ll want to take a bite everytime you open the fridge and spot it ;O)
TOTAL: $9.79 – 6 servings = $1.63 per serving
1. Heat honey in a pot. Once it starts to melt add in cardamom spice, and vanilla extract.
2. When this comes to a boil, add in pears and simmer until pears are soft, and browned.
3. Remove from heat, and add in coconut flakes.
4. Let sit for 10 to 20 minutes until thickened.
