I wanted to share something unique and different with you: Spaghetti Squash! A lot of people either don’t know about this wonderful veggie. Squash is that hidden food that you can season to create whatever flavor you want. It’s a hidden gem in the food world! So easy to cook, prepare and don’t forget EAT!!
Spaghetti Squash – $2.00
2 Avocados – $1.50
Mushrooms – $2.00
Bell Pepper – $0.59
TOTAL: $6.09 – 5 servings = $1.22 per serving
1 Spaghetti Squash
2 Avocados, mashed or chopped up for food processing
1 C Mushrooms, chopped into bite size pieces
1 Bell Pepper, chopped into bite size pieces
2 TBSP Bohemian Forest Rub
1. Cook Spaghetti Squash, either in the oven or in the microwave. Be sure to poke it with a knife so that it won’t explode on you.
2. Scrape out the squash. This should come out looking like spaghetti noodles.
3. Place avocados, and seasoning into a food processor. Mix together to create your alfredo sauce.
4. Mix together all ingredients until spaghetti squash is completely coated.
