For the holiday I was asked to bring a vegetarian dish. Wanting something that would go with all the meats and cheeses and heavy salads that you typically find at backyard Texas BBQ’s I decided to pop out this recipe from the far reaches of my recipes. It has a bit of a kick, but when served cold it is a very refreshing taste.
You don’t need a BBQ to make this – use it for a cool meal to have in the fridge for easy meals. Try it, leave for your family, friends or spouses; or enjoy it for yourself if you’re having a busy week. Makes for eating healthier through a busy week that much easier!
Barilla Protein Plus Pasta – $2.19
Jar Organic Salsa – $1.99
Cream Cheese – $1.29
Corn – $0.79
Black Beans – $0.65
TOTAL: $6.91 – 8 Servings = $0.86
1 Box Barilla Protein Plus Pasta
1 16 oz Jar Organic/Fresh Salsa – Medium
1 Block Low Fat Cream Cheese
1 Can or Small Package Corn
1 Can or Small Package Black Beans
1. Make pasta as directed on the box. Rinse and chill.
2. Mix together pasta, salsa and cream cheese.
3. Add in corn and black beans. Mix and chill for at least 20 minutes.
