It was one of those days, you know the ones:  no energy to do much, really just want to sit on the couch and not do much after a very exhausting week.  My solution is to grab some leftovers that are quick, and easy to throw together — and does not include running to one of the fast food joints around town.

COST:

Everything was leftover and already in the pantry.

1 package Gourmet Texas Pasta Spinach Basil Garlic Linguine- $7.00 (4-6 servings)
1 Tomato – $0.79
Kidney Beans – $0.99

TOTAL: $8.78 = $1.46 per serving

RECIPE:

1 C Linguine Pasta, cooked and chilled
1 C Kidney Beans, pre-cooked
1 Tomato chopped up, and any other veggies you choose
2 TBSP Low Fat Vinegar Based Salad Dressing (I used Catalina)

1.  Prepare pasta according to instructions, and chill with ice or cool water.
2.  Once pasta has cooled, combine all ingredients.

ENJOY!

Calories:  204 with tomatoes
