I bet you would never expect a blog post in this area of health to include chips. When I found this recipe, I couldn’t help but try it. I confess I have been munching on these little guys ever since I made them. They were made especially delicious by putting the added seasoning on it. The only thing I would personally change is eliminating the salt completely. It’s just not one of my preferred tastes. If you do crave potato chips with salt — a little bit goes a long way in this recipe. It takes 20 minutes to bake and voila … delicious veggie style chips. They really do taste like those veggies potato chips they sell now.
There is of course one exception … these are healthy and good for you! Having trouble getting those green veggies in daily, make some of these Kale Chips and enjoy munching on your greens instead.
This has just become a staple in my pantry :O) I can’t wait to make a ton of these, and store them in a ziplock baggie for a whole week of munching.
Kale – $0.99
EVOO – in house already
Seasoning – $1.55 for the BBQ mixture
TOTAL: $2.54 – 2 servings: $1.27
1T Olive Oil
1/2 TSP Salt and/or BBQ or Potato Chip Style Seasonings
1. Preheat oven to 300 degrees.
2. Rinse and dry kale. Chop kale into chip-sized pieces.
3. Toss with olive oil and salt/seasoning.
4. Spread on baking sheet in a single layer.
5. Bake for 20 minutes or until crispy.
6. Let cool 5 minutes
Calories: 96.1 per cup! Kale, like spinach, is made up of protein, so each serving has 2.6 g protein :o)
