What are ladies made of?  The same thing as these tacos: sweetness and spiciness, and everything that is OOOOH so nice!

Seriously though folks, this is a great recipe for when you are craving something quick and refreshing.  It’s 100 degrees (or close enough!) today and yes this is cold and was a good choice for my taste buds.

Enjoy this twist on a traditional favorite typically coming from Mexico.  Other options for this recipe is to use grilled fish like Tilapia or Mahi Mahi.  YUM YUM YUM!!


COST: 

Leftover Chicken (original cost of rottisserie chicken: $6.99) – Free
Can of Pineapple chunks in it’s own juice – $1.19
Tortillas – $0.88 (on sale)

TOTAL:  $2.08 – 2 servings: $1.04 per serving

RECIPE:

1 can pineapple chunks or 1 C fresh pineapple cut into chunks
1 C Chicken or Fish shredded into bite size pieces
4 Small Corn or Flour Tortillas

1.  Mix together the pineapple and chicken/fish.
2. Fill 2 tortillas per serving with mixture
