Some veggies, a container of yogurt & cucumbers … that’s how easy today’s meal is!  It’s the perfect summer treat, regardless of the veggie you choose to couple with your dip.  If you aren’t a huge artichoke fan, that’s ok — go grab some carrots, slice the remaining cucumber into sticks or circles.  Whatever you enjoy – this Greek specialty really goes fabulously with anything you eat it with.

5 Minutes to mix together the dip — 45-60 to steam the artichoke.  Both are delicious!


COST:

Fresh Large Artichoke – $2.59
1 Individual Container Greek Plain Yogurt – $1.19
Cucumber – $0.62
Dill Seasoning – $2.79

TOTAL: $11.97 – at least 6 servings = $1.82

RECIPE:

1 Large Artichoke – or 1 serving of Veggies for each person
6 oz. Plain Greek Yogurt per serving
1/4 C Cucumber pieces grated or chopped into small pieces
1 TBSP Dill (dried or fresh)
1 TSP Garlic (minced or powder)

1.  Steam artichoke, as in video, or prepare raw veggie tray.
2.  Mix together remaining ingredients, and chill for at least 5 minutes before enjoying with your veggies.
