I’m not a very good baker, which I will mention over and over again.  Because of this I am always looking for shortcuts, and easier ways to bake while still keeping things healthy, and delicious.  Here’s one of my little tricks :O)


COST:

Whole Grain Muffin Mix – $0.98
Dried Cranberries – $1.97
Trail Mix – $2.50
1 L 2% Milk – $1.98

TOTAL:  $7.43 – 8 servings = $0.92 (not too shabby for a muffin!)

RECIPE:

1 package Whole Grain Muffin Mix 
1/2 C Milk (2% or greater)
1/2 C Dried Cranberries
1/2 C Trail Mix

1.  Preheat oven to 425 degrees.
2.  Mix together muffin mix and milk until all of the muffin mix is wet.
3.  Slowly add cranberries, and trail mix.
4.  Grease muffin pan using 1 TBSP butter or spray EVOO.
5.  Fill muffin cups about 2/3 to 3/4 full.
6.  Bake 14-17 minutes until done.
