One of my favorite salads at California Pizza Kitchen is their Chinese Chicken Salad. When I first lost weight, I was on a mission to find as many varieties of salad recipes as I could. Over the years I’ve figured out how to create the same flavor as I get when I indulge in a visit to the CPK restaurants. This recipe takes me less than 2-minutes to prepare – NO JOKE!
It’s easy, quick, and extremely light in calories! Especially when you already have leftover fruit to use :O)
Bag of pre-washed shredded triple Cabbage – $1.69
Asian Sesame style Dressing – $1.79
Fruit – $1.29 (you can use mandarin oranges in it’s own juices, or any of the other seasonal citrus type fruit you like)
Small Bag Cashews – $1.99
TOTAL: $6.76 – 4 servings = $1.69
1 small bag pre-washed shredded triple cabbage
1 C Citrus Fruit of your choice
1/2 C Almonds, Cashews or Peanuts
1/2 jar Asian Sesame Style Dressing
Cooked Skinless, Boneless Chicken Breast – cut up (optional)
1. In a large bowl mix the first three ingredients, and chicken if you’ve chosen to include it.
2. Slowly mix in dressing until everything is coated. Use 1-3 tsp. hot sauce if you prefer the spicy version of this Chinese salad.
3. You can either eat right away, or put it in the fridge for 30 minutes to let it soak in the flavors.
