This recipe I created after going to the grocery store, walking around and grabbing things that were on sale.  I had in mind that I wanted to take something refreshing to the competition.  Pasta salads are usually a wonderful choice.  There are so many options when preparing pasta salads. 

We won 2nd Place — losing by only 1 point to a Queso dish with sausage.  Not too shabby for my first real cooking competition!



Barilla Protein Plus – $1.88
Garbanzo Beans – $1.50
Fat Free Feta – $3.48
Canned Manderin Oranges – $1.29
Pineapple – $2.98
Strawberries – $3.35
Mango Vinaigrette – $3.48

TOTAL: $16.96 – 20 servings = $0.85


1 box pasta
1 16 oz. can garbanzo beans
1 small box crumbled fat free feta cheese
1 Pineapple Cut into pieces or 1 large can of Pineapple tidbits
2 lbs. Strawberries cut into pieces
16 oz. Citrus Vinaigrette Dressing

1.  Cook pasta as described on the box.  Drain and Cool with cold water and ice cubes.
2.  Combine everything, including chilled pasta, except the feta cheese in a large bowl.
3.  Add dressing, mix well.
3.  Add 3/4 of the feta, and mix well.
4.  Sprinkle the remaining feta on top and chill covered with plastic wrap for at least 20 minutes.
