My individual green bean salad is the perfect quick meal packed full of monounsaturated fatty acids. I am not a fan of eating onions, but the flavor the caramelized onions in the almonds and green beans is too yummy to not include them!

1 White Onion, diced
1 16 oz. bag frozen or 1 lb. fresh green beans
1/2 C bag of sliced almonds
1 tsp. garlic powder or 1 clove minced garlic
2 TBSP EVOO
1. Heat EVOO in skillet or wok.
2. Add onions and garlic into pan and stir fry until caramelized (about 5 mins.)
3. Add almonds into pan, and stir fry for 1 minute.
4. Add green beans and stir fry until heated thoroughly through — keep it crunchy!
