A delicious option for a quick and easy Meatless Monday sandwich.  Use whatever veggies you’d like.  This dish is amazing with sprouts, avocado, cucumbers, peppers, tomatoes or any other crunchy veggies.


Cost:

Home-grown Tomato – free thanks to a lovely neighbor!
Thin roll – free – this is a leftover
Mayonnaise -free – I use this so infrequently that I tend to buy one bottle every three months or so.  Just to be on the safe side.
Mustard – free – this is the same as my mayonnaise.

The point of this sandwich is to use leftover veggies, and enjoy them together in an almost effortless fashion.

Recipe:

Veggies of your choice sliced for sandwiches
1-2 TBSP Mayonnaise
1 TBSP Mustard
1 Thin Roll Sliced

1. Toast bread if desired.  Top bread with mayonnaise, then use mustard and mix into the mayonnaise
2. Top with veggies on at a time

 ENJOY!!

Calories: 209.12 (90 calories mayonnaise, 100 bread, and 19 for the whole tomato) add 10-20 calories per veggies you include in this sandwich…. Don’t hold back!
