For those of us who enjoy a healthier omelette – delicious, healthier choices make for a wonderful treat in the morning.

I had a rough night, and just needed a quick, easy breakfast that was packed with protein and veggies.  A little low fat cheese with a kick and my favorite veggies … could you ask for more?

Well… maybe a cabana boy to make it for me :O)


Nothing – I had everything on hand this morning.

Eggs – $2.19
Avocado – $0.79
Tomato – $0.64
Laughing Cow Cheese – $2.59

Total: $6.21 (purchase serves 6 – cost per serving: $1.04)


2 Eggs
1 Laughing Cow Cheese Lite Wedge
1/2 Small Tomato
1/4 Avocado

1. Chop veggies and cheese into bite sized pieces.
2. Whisk eggs until blended.
3.  Place eggs into heated skillet (using medium heat), and let cook for a few minutes.
4.  Once eggs are cooked half way, either add the veggies and cheese and either scramble the mixture together, or fold the omelette over and cook for just a few seconds more to heat through your finished product.
