If you haven’t had the chance to try the Yard House, or haven’t heard of it — you need to try it the next time you are in SoCal, San Antonio or Dallas. It is hands down the best restaurant out there! My favorite dish is their Spicy Tuna Roll, so in order to enjoy this dish as often as possible I re-created my own version of it. I constantly switch up the dressing, and seafood of choice. My favorite will always be raw Ahi Tuna, but for us normal, budget individuals whats on sale works for everyday enjoyment.
1/2 lb. Shrimp $2.60
Honey Mustard Vinaigrette – about $2.00 or so (supplies make 10 bottles)
Vine Ripened Tomato $0.64
Matchstick Carrots $1.19
16 oz. Edamame $1.99
Total: $8.20 (4 servings = $2.05 per serving!)
1/2 lb. Shrimp (or other seafood)
1 small Avocado
1 small Tomato
1/4 C Carrots
1 C Edamame out of it’s shell
(add in whatever additional veggies you’ like)
1/4 – 1/2 C Honey Mustard Dressing (recipe below)
1. Chop avocados, tomatoes and any other veggies you have up and place in bowl.
2. Place seafood, carrots and dressing in same bowl, mix well.
3. Cover and refrigerate at least 20 minutes. This is good for up to 3 days following preparation.
Honey Mustard Dressing (recipe):
1/8 C White or White Wine Vinegar
1/4 C EVOO
2 TBSP Honey
2 TBSP Mustard
Combine all ingredients in shaker bottle and shake well. Top veggies, salad or use to marinate meats and legumes.
