I love snacking on Sundays.  Easy meals to prepare, not a lot prep work, and I get to finish up any leftovers I have sitting in my fridge.  This routine makes for a yummy, easy start to my week.

This snack is packed full of nutrients we need on a regular basis, especially us women!  Cranberries to help our bladder and urinary tract functions.  Cranberries kill and flush bacteria that sometimes finds its way into our tracts throughout our normal every day lives.  I know it’s not the most pleasant thing to think about, but it’s a great method of preventative health care.

Cost of Ingredients:

None!  I had all of these ingredients on hand.  If you were to buy these all for the first time, here’s what it would cost:

Hummus – made a few days ago
Dried Cranberries aka Craisins $2.50
Laughing Cow Cheese $3.00
Low Salt Brown Rice Cakes $1.00

Total: $5.50


2 Low Salt Brown Rice Cakes
2 TBSP Hummus
1 Wedge of Lite Laughing Cow Cheese Wedge (flavored optional)
1/4 C Craisins

1. Spread 1/2 a wedge of cheese onto each rice cake.
2. Then top with 1 TBSP hummus on each rice cake.
3. Sprinkle each evenly with craisins.
4. Sit & Enjoy your afternoon snack!

Calories: 270 **

**Snacks should be between 200 to 300 calories, meals between 300 to 400 on a regular healthy nutrition program, even if you are trying to lose weight!

    ok..i'll give this a try BUT ONLY because you said so. it's gotta be healthier than my usual Doritos i reach for. i'll probably substitute the Craisins for something else.

    Use the spicy versions of the laughing cow cheese, and you can add peppers or any other veggies you want as toppers. Tastes just as good, sometimes better ;O)
