Day 3 introduces my favorite chicken recipe.  This chicken is delicious used in a second dish, on a salad as shown here, or by itself as an afternoon protein pick-me-up.  This chicken has been one of my staple recipes for many years now.  Your chicken turns out moist and juicy, even though it’s well done.  This dish serves 8 people with proper portions.  An appropriate serving size is 3 oz. of chicken or half of each chicken breast. There were 4 in the package I bought this week.

Cost of Ingredients:

1.28 lbs. Free Range Organic Chicken – $7.67
Lime Juice – $1.50
Garlic Powder – $2.00
Chives – $1.00 for a bunch (I’ve used this in three different recipes, and have a 1/4 C leftover for a fourth!)
Cilantro – $0.75 for a bunch (same as the chives, but I have more than a C leftover for several more recipes)
Local Honey – $3.99 (worth the money!)
Sprinkle of Ground Red Pepper – $1.00

Total of Ingredients (if bought for the first time):  $17.91

What I actually spent at the grocery store for this meal: $9.17


1 – 1 1/2 lbs. Free Range Skinless, Boneless Chicken Breast
1/2 C Local Honey
1/2 C Lime Juice
1/2 C Chopped Onions or Chives
1/2 C Chopped Fresh Cilantro
1/2 C Chopped Chipotle Peppers (optional)
2 TBSP Garlic Powder
1 tsp. of Red Pepper (optional)
2 TBSP Extra Virgin Olive Oil (EVOO)

1.  Whisk together lime juice and honey, until they are completely blended.
2.  Add remaining ingredients, mix well.
3.  Put chicken into bowl and mix with hands to coat chicken completely with marinade.
4.  Cover and refrigerate for 30 minutes or longer.
5.  Preheat over to 350 degrees.
6.  Coat a rectangular glass dish with EVOO, put chicken into dish.
7.  Cover and bake for 30 minutes, or until fully cooked and feels firm.

When this chicken is ready, your house will smell absolutely scrumptious!  Top a salad using this chicken, or steam some veggies, and roasted potatoes.  Leftovers can be used in stir fries, or cut up and used throughout the week for salads and other chicken based meals. 

Calories: 139, Protein 26.5, Fat 2.25 g, Sat. Fat 0.5  (not shabby for a recipe with honey in it!)
